Raw winter salad

Ingredients:

  • half head cauliflower and brokkoli each, cut into bite-size pieces
  • 1 Tbsp salt
  • 1/4 cup apple cidre vinegar
  • 200g cooked chestnuts
  • 1 Tbsp olive oil
  • 1 Tbsp dark maple syrup
  • pinch of salt
  • 1/4 cup Gojibeeren, 10 minutes soaked in warm water

Dressing

  • 1 cup cashews, soaked overnight and drained
  • 1/2 cup water
  • 3 Tbsp lemon juice
  • 4 pieces candied ginger
  • 1 Tbsp olive oil
  • salt, pepper

Marinade the brokkoli and cauliflower with the salt and apple cidre vinegar for half hour.
In a pan heat up the oil, add the cooked chestnuts and roast for a few minutes.
Add the maple syrup and a pinch of salt, turn off the heat and stir for another minute or two.
Blend all the dressing ingredients and mix with the vegetables, chestnuts and goji berries.
